Ingredients:
340g self raising flour
1.5 tsp Baking powder
340g caster sugar
225g butter
2 cooking apples
1 tsp almond essence
3 eggs
25g flaked almonds
METHOD:
Line a 21cm spring form cake tin
Preheat the oven to 160C / 140C fan, gm3
Melt the butter in a saucepan until fully melted.
Place the flour, baking powder, sugar, almond essence, eggs and melted butter in a bowl and mix until combined.
Peel and slice apples.
Place half the cake batter into the lined tin, then spread the apple slices on top, followed by the remaining cake batter. Sprinkle with the almonds
Place in the oven for 60-70 minutes until golden brown.
Remove from oven, run a knife around the edge of the cake and leave to cool completely in the tin.
Enjoy in the afternoon with tea, or as a dessert warmed with a scoop of clotted cream!
